The grapes are harvested, by hand and machine, only when they are fully ripe.

 

They are then taken to the chai where they are manually sorted to make sure only the best quality goes into the vats.

Jean-Michel then matures the wines in French oak barrels between 12 and 18 months, taking great care to match the level of oak to the structure of the wine for balance and complexity.

 

The final step, bottling, takes place at the Château both to control quality and authenticity.
